John Quarisa has 24 years experience making some of Australia’s most successful wines including stints with McWilliams Nugen and Casella. He is a very well respected show judge and has won two of Australia’s most prestigious wine making trophies the Jimmy Watson and the Stodart trophies.
He now makes wines in his own name with the ‘Treasures’ range being a true expression of specific regions. Interestingly he is a virtual wine maker in that he neither owns vineyards nor a winery. Instead he contract buys grapes from grape growers with whom he works very closely and vinifies the wines at rented space in various wineries. This has enabled him to get started in a cost effective way.
The Treasures Coonawarra Cabernet is a classic with garnet red to plum colours and a vibrant intense nose of blackcurrants with just a hint of mint. In the mouth the lush fruit is supported by a fresh apple and blackcurrant acidity, the flavours are complex and last. For me this would work well with a thick fillet steak marinated in soy sauce and served with some caramelised onions.
